Jaipur: The Income Tax Department Monday continued for a second day the survey of three restaurants in Jaipur and one in Ajmer over suspected tax evasion, with officials alleging the establishments manipulated and suppressed income to reduce tax liability.The survey is underway at Rosado Bar and Restaurant on Gandhi Path, Kebabs and Curries in Raja Park, and The Pearl Palace on Ajmer Road in Jaipur. In Ajmer, teams are surveying Mango Masala Restaurant at the Swami Complex intersection.“Our teams reached the establishments Sunday afternoon and began examining financial records and other business documents. The action continued Monday morning,” said an officer on the condition of anonymity.Sources said the department suspects large-scale tax evasion and discrepancies in financial transactions. Officials are checking account books, billing records, digital transaction details, and other documents related to income and expenditure, and are questioning management and staff about business operations and revenue records.
